Cake clacker

I never, ever thought I would utter the statement “I baked a cake”. This came as quite a shock to me and my friends, who seem to be puzzled and slightly terrified at the prospect of an all new baking Bates.
 
After yesterday's efforts I think I can quite happily claim the title of domestic goddess, move your heaving bosoms out of the way Nigella, I am much cooler than you, like way!
 
It was Ian’s birthday yesterday. At the grand old age of 27 he still loves nothing more than having Happy Birthday sang to him and blowing out the candles on his cake, to which I gladly obliged, and after all how could I deny his little face. Last year I bought him a monkey cake from th'Asda, but this year I thought I would get creative and bake my very first cake. Anyone interested can follow my recipe below…
 
The ‘I’m dripping’ chocolate clacker birthday cake
NB: I did not measure amounts, apart from the eggs, just throw it all in and if the mixture is quite thick then you’re onto a winner! You need to scroll down to see my masterpiece :)
 
The sponge:
Self raising flour
Caster sugar
Cocoa powder
Three eggs
Margarine
 
The filling:
Clotted cream (naughty)
Strawberry jam (the one with no lumps in)
 
The topping:
Candles
 
Method
Stage one:
  • Preheat the oven to 180 degrees centigrade 
  • Mix the margarine and caster sugar together in a big mixing bowl
  • Mix the eggs in one at a time for about 5 minutes, until the mixture leaves a trail when you lift the whisk out
  • Then, gently fold in half of the flour. Once that is mixed in do the same with the rest of the flour and the cocoa powder.
  • Try not to eat all the mixture and pour it into a round cake baking tin, pop in the oven for 30/40 minutes. Once done, leave to cool on a rack.
Stage two:
  • Once cooled, slice the cake in half so you have two sandwiches.
  • Spread LOADS of strawberry jam over the bottom half
  • Pour the clotted cream over the jam (amazing!)
  • Sprinkle millions of chocolate chips over the cream
  • Place the other half of the cake on top and leave to sit.
Grande finale:
  • Break up the chocolate into squares and place in a bowl, which has been heating over a ban of hot water (don’t let the water boil)
  • Once the chocolate has melted, use a warm knife to spread it all over the cake
  • Once the cake is covered put it in the fridge for about an hour to let it all set
Now all you have to do is decorate the cake with whatever you like. Hopefully this recipe will work for anyone following it; don’t worry about having no measurements, numbers are far too constricting in life. Especially when we are talking about chocolate cake, go forth and gorge!
